At NIHI Sumba, food is an expression of place and season. Much of what arrives on your plate is grown in our own organic gardens or sourced from the surrounding Sumbanese land and sea.
Our culinary approach honours simple, elemental techniques: flame-grilling, slow-cooking, wood-smoking. These time-honoured methods are paired with global influences, creating dishes that feel both grounded and refined.
Our all-inclusive dining invites you to enjoy three daily meals, snacks, and non-alcoholic beverages without limitation. Dine in the privacy of your villa or in thoughtfully chosen locations around the property. For something more intimate, we can arrange a private dinner beneath the stars.

Meaning “wave front,” Ombak is the heart of NIHI’s dining experience.

Proceeds go to the @sumbafoundation to help fund equipment the kids from the nearby villages may need for schooling.

Each day across the island of Sumba, locals bring their horses to the shoreline, where they wade into the sea to bathe and swim in the saltwater. A ritual as old as the island itself.
Where horses race along the shoreline and every moment feels untouched. The sight of @nihi’s herd galloping down the white sand of Nihiwatu Beach is unforgettable. Framed by the Indian Ocean and swaying palm trees, this is a type of magic you can only find and feel on the Edge of Wildness.
